Twin Cities Live - Ooey Gooey Oatmeal Butterscotch Cookie

Twin Cities Live was back at Something Sweet by Maddie Lu for today's segment of the 12 days of Cookies.  Maddie came up with something extra special - her Ooey Gooey Oatmeal Butterscotch cookies. If you love butterscotch, you HAVE to try these.  She says they pair great with our Butter Brittle ice cream and we couldn't agree more!

Ooey Gooey Oatmeal Butterscotch Cookies

2 eggs
1 cup brown sugar
1/2 cup granulated sugar
8oz butter
2TBLS vanilla
3 cups oats
1.5 cup flour
1 tsp baking soda
1/4 tsp salt
2 cups butterscotch chips

Directions:

Cream together egg brown sugar, sugar, salt, butter, vanilla
Add dry ingredients saving the oats for last
Fold in the chips
Bake for 11 minutes @ 325. (all oven baking times will differ)
