For day two of Twin Cities Live-12 Days of Cookies, Maddie Lu Carlos with 'Something Sweet by Maddie Lu" has created a delicious Chocolate Snowdrift Cookie. She has paired this cookie with our Peppermint Krisp ice cream...yum!

Chocolate Snowdrift Cookies
1 2/3 cups all-purpose flour
1 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tsp vanilla extract
1 tsp peppermint extract
16 oz. white chocolate chopped into small pieces
1/4 cup crushed peppermint bits
Cream butter and sugars together on medium speed until light and fluffy. Add in your eggs, vanilla, and peppermint extract. Mix until combined. Add in all dry ingredients and mix on medium speed for 30 seconds, scraping the sides.
Bake at 350 degrees for 10-12 minutes or until the centers don’t look wet anymore. (I like these cookies soft so I under bake them a tad bit)
Once cookies cool, melt your white chocolate in the microwave or over a double boiler. Do not get your chocolate too hot. Stir often. Dip half the cookie in white chocolate and sprinkle your crushed peppermint over the top.
